BEEF A LO!
Yes, I went to the Fresh Farm Market yesterday with my dear friend Abby, to get ourselves some dinner, and what did we find but some LOCAL BISON. Since I associate bison mostly with Colorado and other various plains North and West of Texas, the prospect of “local bison” severely intrigued me. We bought a pound of ground for four dollars and my was it tasty. I highly recommend. Not only are these beasts sustainable agriculture but they are leaner even than chicken (2.42 gr of fat and 143 cal / 100 grams). Also available were bison sausages, flank steak, filet, you name it. I can’t believe that I haven’t been to this farmer’s market before - it’s not far away from work, but just far enough and at odd enough hours (3-7 Thursdays) that I’ve never run into it accidentally before. Here’s a sample of the things I wished I had bought: scotch bonnets (ow), serrano peppers, daikon, baby bok choy, kale, gourmet cheeses, a mushroom sampler, clouds of lettuces… I could go on. Perhaps this market will become part of my Thursday routine.
Additionally, it appears that you can visit the bison farm! I like the idea of seeing my dinner happily grazing. Field trip anyone?
