Since I thought the cover of this month’s Real Simple mag was pretty, I snagged it on my way home from Raleigh this weekend to find, lo and behold, the beautiful picture above and its accompanying “Roasted Sweet Potato and Apple Soup” recipe. Perfect! I am a sucker for fall soups, in case you didn’t notice. So I tried this one last night, even though I don’t have any of those quaint seaside mugs in which to serve the soup. But it does look nearly as pretty in a tupperware. Okay, not really. I confess, though, that I found the flavors a little dull and dumped a good deal more pepper in, along with some nutmeg and cumin, which seemed to do the trick. I wish the tartness of the apple came through a bit more as well. The consistency is quite nice, though, and I’m excited to eat lunch today. If only I had made that cranberry cornbread to go with it…
[Might I add that this is a fine burnt orange soup to serve in honor of the much-anticipated hopefully-successful obliterating of a certain Oklahoma team this Saturday. \m/ hook ‘em soup.]
